Quinoa Surprise

My cousin brought this dish to a Superbowl party and I've been in love with it ever since! 

Makes 4 servings
Total Time: 30 minutes



  • 1 cup quinoa
  • 2 cups water
  • 1.5 cups shelled edamame {1/2 pound}, frozen
  • 1 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1/2 large red onion, minced
  • 1/2 cup apricots, dried, diced
  • 1/2 cups cranberries, dried
  • 1 tbsp curry powder
  • 1 tsp salt
  • Juice of 1/2 a lemon


  1. Make quinoa according to the package instructions--you'll know it is done when you see a transleucent ring around the outside of each grain.
  2. Meanwhile, steam the frozen edamame by package instructions as well.
  3. In a large salad bowl, stir together the quinoa, edamame, red pepper, cilantro, onion, apricots, cranberries, curry powder, salt, and lemon juice. Let chill for an hour to let the flavors combine.

Additional Notes

I love onions, but one time, we added WAY too much red onion and it ruined the dish--maybe I didn't measure, but we now go easy on the onions.
